Ingredients:
2 lbs Beef Stew Meat
1 onion, chopped
1 tbsp butter
2 fennel bulbs, thinly sliced
2 carrots, sliced
1 bell pepper, chopped
2 cloves garlic, smashed
3 cups beef broth
2 tbsp tomato paste
1 tsp fennel seeds
1 tsp paprika
1 tsp thyme
2 bay leaves
Salt and Pepper to taste
Directions:
1. Brown meat in batches in cast iron over medium-high heat for 5 minutes
2. Sauté onion in the butter until translucent
3. Put all other ingredients in the slow cooker with the mean and cook on low for 8 hours. Salt and pepper to taste before serving.
Serves about 6.
